Truffle & Grilled Peaches Caprese Salad
Looking for an exciting dish to transition from summer to fall? This recipe is the perfect way to enjoy the last peaches and tomatoes of the season while adding an autumn’s favorite to the mix: fresh Burgundy truffles. You only need a few extra ingredients to take a classic Caprese Salad to the next level. The flavor combination between the umami of the truffles, the sweet and smoky grilled peaches and creamy burrata makes all the difference. Hungry yet?
INGREDIENTS:
-Heirloom Tomatoes
-Burrata Cheese
-Ripe Peaches
-Fresh Burgundy Truffles (optional)
-Fresh Basil
-Extra Virgin Olive Oil
-Lemon Juice
-Balsamic Vinegar
-Salt & Pepper
DIRECTIONS:
Very little directions are needed for this classic summer treat with a twist:
-Slice the peaches and brush them with olive oil, put them on the grill on both sides until lightly charred
-Slice the tomatoes
-Assemble by creating a bed of tomatoes and grilled peaches on a flat plate
-Drizzle a generous amount of Extra Virgin Olive Oil, lemon juice and balsamic vinegar
-Place the burrata cheese in the middle and drizzle a small amount of White Truffle Oil over it
-Season everything with salt and pepper
-Add fresh basil and shave fresh Burgundy Truffles
NOTES:
The Burgundy truffles add a subtle nutty, earthy touch, but they can be fully replaced by the White Truffle Oil if you are on a budget. A little drizzle goes a long way!
The burrata is my preferred choice for its heavenly creaminess, but if not available or cost effective, mozzarella won’t disappoint!
Use a premium grade EVOO to brush the peaches before grilling and add to your salad dressing.
Last but not least, make sure to pick the juiciest and most vibrant heirloom tomatoes, the base of your salad, and this will be a hit for your next dinner party, brunch or bbq!
